Plain Jane Plantain
Plantains: Fillet thin strips of 2 Plantains and separate two choice slices, fry with 1/2 Cup Brown Sugar, 1/4 Cup Dark Rum, 1/4 Cup Butter in pan, mashing everything but two choice slices together until seasoned. *Fry until softened.
MIX
- 2 Eggs
- 1/2 Cup Oil
- 1/4 Cup Sugar
- 1/3 Cup Milk
- 2 tsp Vanilla
SIFT
- 1 Cup Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 tsp Nutmeg
- 1/2 tsp Cinnamon
- 1 Brick Cinnamon Graham Crakers
FOLD: Wet and Dry ingredients together
ADD-IN: Fried Plantains pour into pan and lay the two Plantain fillets on top of the batter in the pan.
