Fillet and fry plantains with brown sugar, dark rum, and butter. Set aside. Mash bananas. Combine MIX ingredients. Sift dry ingredients together, including crushed cinnamon graham crackers. Fold wet into dry. Add fried plantains and place two fillets on top. Pour into greased loaf pan. Bake at 350°F for 1 hour. Top with warm butter.
